Oven-Roasted Potatoes

Levi is an extremely easy man to feed - he's really not picky at. all. But one of the things that makes him giggle like a schoolgirl...ahem...a schoolboy?...is this yummy side-dish of roasted red potatoes. They are so simple to make and so very very delightful to eat.

What to get: 
-Potatoes of your choice (I like red!)
-olive oil
-minced garlic
-salt | pepper | rosemary 
-parmesan cheese

What to do:
-cut potatoes into bite-sized wedges and spread in a single layer on a cookie sheet
-cover potatoes with layer of salt & pepper as desired
-mix olive oil and desired amount of garlic together in small bowl and brush generously over potatoes
-sprinkle potatoes with rosemary and parmesan cheese (lots! :-D)
-place rack(s) as high as possible in the oven and bake at 425 for approx. 30 mins, using a spatula to flip/mix the potatoes halfway through so they don't stick to the pan. (check them when it's getting close to time - you don't want them to burn or the parmesan and herbs will taste bitter.)
